(1) WEEKLY DINNER IDEAS

I wanted to start to share weekly dinner menus with everyone, in hopes to inspire you  to get into the kitchen, and have fun. Pick and choose which dinners work best for you and your family, and feel free to swap out certain ingredients. Please don’t hesitate to contact me with any questions!

1. Chicken thighs with fresh thyme and mushrooms

This will be a one pan meal!
I bought 8 SKIN ON thighs for my husband, myself and the kids.
2 medium containers of baby bella mushrooms
2 tbsp fresh thyme
1 carton of organic condensed mushroom soup
1/2 cup white wine
2 tbsp butter
1tbsp evoo
1/2 cup all purpose flour
1 tsp salt
1 tsp pepper
1 tbsp fresh garlic

 

In and large saute pan, heat your evoo and 1 tbsp of butter on low. dredge your chicken thighs in the flour, coating them and then shake off excess flour. Your going to brown them in your pan on medium heat, putting them down skin side first. Don’t touch them for about 3 minutes. they should have a golden crust now, and you can turn them over. after another 3 minutes remove the chicken from the pan and set aside.
In the same pan, add in the other TBSP of butter, mushrooms and wine. bringing the heat up, and scrapping up the brown bits from the bottom. once you’ve done that you can add in the garlic,chopped thyme and seasoning. turn the heat to low and simmer. after about 10-15 minutes, pour in the condensed soup. stir to combine. you can now add the chicken back in and simmer for about 20 minutes.
you can serve this with pasta, quinoa or wild rice.

 

2. Baked Salmon with Parmesan roasted broccoli and sweet potatoes
I couldn’t get salmon this week, so I chose grouper. You can use whatever fish you prefer.
1 lg head of broccoli
1 lg sweet potato
2 fish filets
4 tbsp evoo
1 tsp salt
1 tsp pepper
2 tbsp Parmesan cheese
1/2 fresh lemon
whatever all purpose seasoning you have on hand (for the fish)

preheat your oven to 400.  grab a cookie sheet and cut your broccoli into florets. Cut your sweet potato into small cubes. place them both onto the cookie sheet and drizzle with the evoo, salt, pepper, and cheese.
Roast for about 25 minutes, turning them halfway. There’s a chance the broccoli will cook faster, so just remove it from the sheet and pop the sweet potato back in.
For the fish, turn the oven down to 375 and place the fish on a cookie sheet or baking dish. Squeeze the fresh lemon over the top and sprinkle on your all purpose seasoning. I love Lawrys. Bake the fish for about 15 minutes, depending on the thickness of it. Serve it along side the roasted veggies.

3. Kale and chicken sausage soup
This recipe can be found on my blog. With this recipe, you should have leftovers. Feel free to add in egg noodles or pastina.

4. Parmesan Chicken tender salad
The recipe for the chicken tenders is on my blog, and perfect for the entire family. This is an easy dinner you can prep ahead of time, and enjoy when your ready. I’ll be making a basic salad with mixed greens, cherry tomatoes, cucumbers, and primal kitchens ranch dressing.

5. Healthy bowl
I like to have one really light meal during the week that’s usually meat free. The ingredients can be prepped ahead of time, and made in double batches so you have leftovers!

Curry roasted Chickpeas
Maple roasted carrots
Salad greens
Parmesan Baked eggplant

Chickpeas
1 can of organic chickpeas
1 tsp curry powder
sprinkle of salt
1/4 tsp paprika
1/4 tsp garlic powder
1 tsp evoo

I cook mine in a small baking dish. drizzle with the evoo and sprinkle on the seasonings. roast at 400 for about 15 minutes

Maple Roasted Carrots
4 Large carrots
1 tbsp pure maple syrup
1/4 tsp salt
1/4 tsp pepper
1 tbsp melted coconut oil

Peel and slice your carrots (making carrot “chips”)
In a small baking dish, drizzle them with the melted coconut oil, maple syrup, and sprinkle on the salt and pepper.
Roast in a 400 degree oven for about 30 minutes, turning them half way through.
