Summer salad with balsamic honey mustard vinaigrette

This salad is so simple, yet delicious and refreshing! My local farmers market here in Florida has had the BEST beefsteak tomatoes lately. They are so juicy and have that vine ripe flavor that just reminds you of hot summer days. When i buy cucumbers i prefer the English kind that have no seeds and you don’t have to peel. I love the crunch they add, and not having to peel them is my favorite part ๐Ÿ˜‰

Try this easy side for your next BBQ! Happy May everyone ๐Ÿ™‚

serves 4

-2 large beefsteak tomatoes ( or a pint of cherry tomatoes cut in half)

-1 english cucumber

Salad dressing:

-1/4 cup extra virgin olive oil

-1/4 cup balsamic vinaigrette

-1 tbsp Dijon mustard

-pinch of salt and pepper

-1 tsp organic honey

whisk together and pour about 4 tbsp over veggies. Mix to coat and if desired, sprinkle more salt and pepper.

Serve with any summertime dish, or enjoy on its own for a light snack!
