
Lately I have been a huge fan of breakfast! I love starting my day with a workout, then figuring out what exactly i’m in the mood for that morning. Today i decided to have a little bit of everything and whipped up this,”died and gone to heaven” breakfast that you see above..
I have to give a little credit to my husband for this idea, since he is the one who has been whipping up some delicious omelets the past couple weekends. He is a huge fan of brussels sprouts, so they seem to sneak their way into every omelet he makes. They add great flavor and nutrition value, which makes them perfect to start the day with. Oh, and who doesn’t love a little bacon…;)
Here’s how i did it…
1 organic egg
1 strip of Applegate farms bacon
1/4 cup diced onion
6 large brussels sprouts or 8 small
1 tbsp Kerrygold butter
pinch of salt and pepper
- dice onion and cut Brussels sprouts in half
- cook slice of bacon until crispy, then set aside in a paper towel
- add onion and Brussels sprouts to bacon fat in pan, adding 1/2 tbsp of butter. sprinkle with S&P
- saute on medium until they begin to soften, about 12 mins
- remove veggies from pan and plate
- In the same pan, add other 1/2 tbsp of butter, and crack egg into it
- cook egg until it is no longer translucent and yolk is still soft
- crumble cooled bacon over veggies, then place sunny side egg on top
- dive in and go straight to heaven!! 😉
