
Spaghetti dinner is perfect for a Sunday night with family. And a bottle of your favorite red 😜
These turkey veggie meatballs are kid approved and easy to whip up. They’re a great way to sneak some veggies into your families dinner! Â Serve them on their own with a little sauce, or with your favorite pasta. I used ancient harvest linguine, and you really couldn’t tell that it wasn’t traditional white pasta.
This recipe makes about 16-18 medium meatballs
2 lbs ground turkey (organic if you can find it)
1 cup gluten free breadcrumbs
1/2 cup grated Italian cheese (locatelli)
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp pepper
1 tbsp garlic powder
2 eggs
1/2 cup grated zucchini (optional)
1/2 cup finely grated carrots (optional)
- Preheat your oven to 375
- In a large mixing bowl, whisk your eggs.
- toss in all your spices, cheese and bread crumbs. Mix
-  now you  can add in your ground turkey, and grated veggies.  It’s time to get dirty haha, take off all your rings and mix everything with your hands. Form whatever size meatballs you want.
- Place them on a parchment paper lined cookie sheet and bake for about 20-25 minutes. To make sure their done, press the top down and make sure they’re firm!
