Breakfast and lunch rolled up in one bowl!

This healthy meal is a little bit of everything rolled into one!
You have your protein from the egg and grass fed beef, and starch from the sweet potato noodles. Also buried under all that goodness, is some portobello mushrooms and onions.
You top it off with the sunny side up egg, and dig in letting the yolk run into the delicious ground meat, and there you have heaven! Or at least i think so.
Here’s how i did it…

•Serves 1•
-1 organic egg
-1/4 lb ground grass-fed beef
-1/2 of a sweet potato
-1/2 onion
-1 whole portobello mushroom
-pinch of salt and pepper
-1tsp grass fed butter
-1 tsp extra virgin OO

•In a large skillet, melt butter at med heat (you can also use extra virgin oo) add the diced onion. Stir till softened.

•Roughly chop mushroom and add to skillet with onions. Sauté till mushrooms cook down.

•Remove onion and mushroom mixture from pan and set aside in a bowl.

•In the same pan add the ground beef. Once beef is cooked through, add back in onion and mushroom mixture.
On low, mix it all and let simmer.

• At this time you can prepare your sweet potato noodles with a spiralizer.
I laid them out on a baking sheet , drizzled a little olive oil over them, and baked them at 400• for about 5-10 mins.
**If you don’t have a spiralizer, then you can use some mashed sweet potato. Either one tastes delish!

• In a small sauté pan, melt a little butter and then crack the egg in. On med heat, cook the egg till the whites are no longer translucent.

•Assemble in a bowl with the sweet potato on the bottom, followed by the meat , onion and mushroom mixture. And last but not least your perfect egg!
