Skinny veggie crockpot soup

If your looking for something to have in the fridge for a quick, light meal, this soup is your new go to! It’s full of veggies, and light on calories.

Here’s what you need..

2 cups fresh string beans cut in half

1-1/2 cups organic celery

1-1/2 cups chopped organic carrots

3 garlic cloves chopped

3 bay leaves

1 small sweet onion diced

1 tsp of salt (to start, then taste and season accordingly)

1 tsp fresh cracked pepper

2 cartons of veggie broth

1 can of organic corn

2 large zucchinis cut into small pieces

1 tsp oregano

1/2 tsp red pepper flakes

-Put the veggies in your crock pot along with the broth and seasonings. Stir and set to high for 6-8 hrs. Remember to taste the soup and add more salt if you need it.
