
One of my favs! Pasta with shrimp, fennel, sweet onion and garlic 😋
All the ingredients can be found at Trader Joe’s!
This dinner is perfect for when you’re having company over, or a stay at home date night 💓
Here’s what you need!
1 pkg of Argentinian shrimp
1 medium sweet onion sliced
3 cloves of garlic minced
1 medium size fennel bulb, sliced
Locatelli cheese
White wine
Pasta of choice (I used @ancientharvest linguine)
Salt
Pepper
Evoo
Butter

Thaw your shrimp. In a large sauté pan heat your evoo (about 2 tbsp) and butter (1 tbsp) add in your sliced sweet onion, fennel and garlic. Sauté on low until they have softened and become translucent.
Season with a pinch of salt, fresh cracked pepper. Once they’ve softened, turn the heat up and little bit and add about 1/4 cup white wine and stir. Bring to a simmer. Boil your pasta water and cook the pasta. Next add in your shrimp and 1/4 cup of Locatelli cheese. Stir and cook until shrimp become pink (about 8 minutes) once your pasta is cooked, add that directly to the pan with the shrimp, and toss!
Taste it now to see if you’d like more salt.
Serve with a sprinkle of Locatelli and top and a side salad 🥗
